A rich, creamy and delicious cashew curry (kaju curry) that you can make at home in 30 minutes.
Ingredients: 1 cup whole cashews, 2 onions, 2 tomatoes, 1/4 cup cashew paste, 1 tsp ginger-garlic paste, garam masala, kasuri methi, butter and cream.
Method: Roast the cashews lightly in butter. Sauté onions, add ginger-garlic paste, then puréed tomatoes and spices. Stir in the cashew paste with a splash of water and simmer. Add the roasted cashews, finish with cream and kasuri methi.
Serve hot with naan or jeera rice. For the best result use large, fresh kernels like our W240 cashews.
